Montblanc Tart
○ Tart dough (18cm tart type for 1 car)
Unsalted butter… 50g
Flour… 90g
Almond Poodle… 10g
Powdered sugar … 30g
Whole eggs… 15g
Salt… little
○ Damand (almond cream)
Unsalted butter… 50g
Powdered sugar… 50g
Whole eggs… 50g
Almond Poodle… 50g
Rum (Myer’s Dark Rum) … 5g
○ Fresh cream
Heavy cream… 150g
Granulated sugar… 7g
○Marron cream
Marron paste… 200g
Heavy cream… 64g
Rum… 4g
○Toppings
thyme
Chestnuts boiled in astringent skin … 3 pcs
Powdered sugar that does not cry
モンブランタルト
○タルト生地（18cmタルト型 1台分）
無塩バター…50g
薄力粉…90g
アーモンドプードル…10g
粉糖 …30g
全卵…15g
塩…少々
○ダマンド（アーモンドクリーム）
無塩バター…50g
粉糖…50g
全卵…50g
アーモンドプードル… 50g
ラム酒（マイヤーズダークラム）…5g
○生クリーム
生クリーム…150g
グラニュー糖…7g
○マロンクリーム
マロンペースト…200g
生クリーム…64g
ラム酒…4g
○トッピング
タイム
栗の渋皮煮…3個
泣かない粉糖
①タルト生地を作る。
バターを柔らかく練って、粉糖を加えて混ぜる。室温に戻した全卵を3,4回に分けて加えてさらに混ぜる。
②薄力粉、アーモンドプードル、塩を振るい入れて、切るように混ぜる。
③ラップに包み冷蔵庫で半日冷やす。
（最低でも1時間）
④タルト型に敷き込み、冷蔵庫で1時間冷やす。
⑤ダマンド（アーモンドクリーム）を作る。
バターを柔らかく練り、粉糖を加えて混ぜる。
室温に戻した全卵を3,4回に分けて加えてさらに混ぜる。アーモンドプードル、ラム酒を加えて混ぜて搾り袋に入れる。
⑥④のタルト型に⑤のダマンドを絞り入れ
180度に予熱したオーブンで30〜35分焼く。
（ご家庭のオーブンで焼き時間は調節してください。）ケーキクーラーの上でよく冷ましておく。
⑦クリームを作る。
生クリームにグラニュー糖を入れて少し固めに泡立てる。⑥のタルトにクリームを絞り、カットした栗の渋皮煮を入れる。冷蔵庫で冷やし固めておく。
⑧マロンクリームを作る。
ボウルにマロンペーストを入れ、よく練る。
生クリームを少しずつ加えて都度混ぜる。
ラム酒を加えて、裏漉しをする。
⑨仕上げ
生クリームを絞った土台にマロンクリームを絞り、生クリームや粉糖、栗の渋皮煮をトッピングする。
(1) Make tart dough.
Knead butter softly, add powdered sugar and mix. Add whole eggs brought to room temperature in 3 or 4 divided doses and mix further.
(2) Sprinkle in plain flour, almond poodle, and salt and mix as if chopping.
(3) Wrap in plastic wrap and chill in the refrigerator for half a day.
(At least 1 hour)
(4) Spread in a tart mold and refrigerate for 1 hour.
(5) Make damand (almond cream).
Knead butter softly, add powdered sugar and mix.
Add whole eggs brought to room temperature in 3 or 4 divided doses and mix further. Add almond poodle, rum, mix and put in a pressing bag.
(6) Squeeze the damand of (5) into the tart mold of (4)
Bake in an oven preheated to 180 degrees for 30-35 minutes.
(Please adjust the baking time in your home oven.) Leave to cool well on the cake cooler.
(7) Make the cream.
Add granulated sugar to the cream and whisk a little harder. Squeeze the cream into the tart in (6) and add the cut chestnuts boiled in astringent skin. Refrigerate and harden.
(8) Make marron cream.
Put the marron paste in a bowl and knead well.
Add the cream little by little and mix each time.
Add rum and strain the back.
(9) Finishing
Squeeze marron cream onto a base with squeezed fresh cream and top with fresh cream, powdered sugar, and chestnuts boiled in astringent skin.
