本日はオーソドックスなクッキーシュークリームの作り方になります。
シュー生地が膨らまないなどのお声もあると思いますが字幕をONにしていただければポイントなど解説してますので作りたい方は字幕入れてみてね♪
■バタークッキー
無塩バター…50g
グラニュー糖…40g
薄力粉…50g
①室温にしたバターをポマード状にしグラニュー糖をすり込む
②薄力粉をふるいバターに粉を含ませるように合わせる。
③生地をラップに包み3㎜厚で伸ばし冷やし固める。
④生地が固まったらシュー生地の大きさに合わせて切るまたはセルクルで抜く
■シュー生地 180℃ 35分
約9個分となります。
水…50ml
牛乳…30ml
無塩バター…40g
塩…一つまみ
薄力粉…40g
全卵…120g
①室温に戻した卵を溶きほぐす。
②薄力粉をふるっておく
③鍋に牛乳、水、バター、塩を入れ沸かす。
④火を止めふるった粉を加えキレイにまとまったら再度、火にかけ生地を糊化させる。
※鍋底に薄い膜ができた頃が目安となります。
⑤生地をボウルに移し溶き卵を数回に分けて加える。
生地を持ち上げなめらかな逆三角に生地が残る程度まで卵を加えます。
※季節や生地の状態によって卵の量は変わります。
⑥生地を絞り袋に入れ天板に絞り表面が乾かないよう霧吹きを180℃に予熱したオーブンで35分焼き上げる。
焼いてる最中に扉を開けしまうとせっかく膨らんだシュー生地が凹んでしまうので注意
■クレームパティエール
卵黄…60g
グラニュー糖…40g
薄力粉…20g
牛乳…250ml
バニラビーンズ
①卵黄にグラニュー糖を加え白っぽくなるまで混ぜる。
②薄力粉を加え全体に馴染ませる。
③鍋に牛乳、バニラビーンズを加え沸かし泡立てた卵黄と合わせ鍋にコシながら戻す。
④中火にかけとろみを付ける。
はじめは液体ですが、どんどん濃度が出て重くなります。
↑ここで辞めてしまうと粉臭さが残るので注意!!
さらに混ぜてると濃度が軽くなりパティシエ全体にツヤが出てきます。
⑤容器に入れ冷ます。
◆クレームディプロマット
クレームパティシエールに対し20%の生クリームを加える。
パティシエのコシを切り立てた生クリームを切るように全体に馴染ませボウルの底から優しく合わせる。
※チョコを加える際はコシを切った状態のパティシエに30gの溶かしたチョコを加え全体が馴染んだら上記と同じ工程でディプロマットを作る。

⑥ Put the dough in a squeeze bag and squeeze it on a baking sheet for 35 minutes in an oven preheated to 180 ° C to prevent the surface from drying out.
Note that if you open the door while baking, the inflated shoe fabric will be dented
■custard
60g…egg yolk
40g…Granulated sugar
20g…Flour
250ml…milk
Vanilla beans
① Add the granulated sugar to the yolk and mix until it becomes whitish.

Add milk and vanilla beans to a pan and combine with the boiled egg yolk
Put it back in the pot.
④ Thicken over medium heat.
Initially it is a liquid, but it becomes more and more concentrated and heavy.
Be careful if you quit here because the powdery smell will remain !!
If you mix more, the concentration becomes lighter and the whole patissier becomes shiny.
⑤ Add the cream cheese that has been returned to room temperature, and when the whole is smooth, put in a container and cool.
◆ Claim Diplomat
Add 20% fresh cream to creme patissier.
Let the patissier’s koshi fit into the whole like cutting fresh cream
Mix gently from the bottom of the bowl.
