Pancake batter
140g plain flour (I use @cotswoldflour)
2 medium eggs (I use @steweeggs )
200ml full cream milk
100ml water
1/4 tsp sea salt
2 tbsp melted unsalted butter
Whisk together, leave for 20 mins, then make your pancakes. I used a little melted butter on the pan, placed over a medium heat, and swirled in a large serving spoon of batter.
40g unsalted butter
Zest of 2 blood oranges (@natoora)
2 1/2 tbsp caster sugar
Juice of 1 blood orange
80ml of Cointreau
Mix the butter, orange zest, and sugar in the saucepan, placed over medium heat. Stir until the sauce caramelizes lightly.
Put the crêpes in the pan, pour the orange juice and Cointreau over, and ignite. Swirl the sauce over the crêpes until the flames subside, and serve immediately with Greek yoghurt or creme fraiche.
