If you are a vegan or someone who doesn’t eat raw eggs or if you want to give something quick & easy without worrying about raw eggs for your kids then this is the recipe for you. I make lots of chickpea salads & I love storing the cooked water because it has all the nutrients & it can be used as egg white substitute in so many recipes. Here is one of them, my favorite chocolate mousse.
Ingredients:
Chickpea cooked water/Aquafaba- ½ Cup
Dark chocolate chips- ½ Cup
½ Tsp Vanilla Extract
1 Tbsp Agave or Honey
2 Tbsp Cacao Power
6 to 7 Strawberries or Raspberries
Recipe: Melt the chocolate on a double boiler & as soon as it melts take it out & stir continuously. Then add vanilla & agave. Mix & set a side to cool. In another bowl beat the chickpea water in high speed until it forms fluff cloud & air is well incorporated. This will take about 5 min. Add the cacao powder & mix for 5 sec. Then fold the cool chocolate gently into the fluff mixture. Transfer evenly in to two desert bowls & cover it with plastic wrap. Refrigerate for at least 30 Min to 1 hour. Decorate with your fav berries & garnish with sprinkles & enjoy
