As someone who follows a carnivore lifestyle, I avoid sugar. But my family? They love their ice cream. So I came up with three simple versions that start with my farm raised egg yolks (duck or chicken):
• Strict Carnivore: Just egg yolks, cream, and salt
• Mostley Carnivore: Add milk to the mix & alternative sweetener
• Standard American Diet: Whole milk, cream, sugar (or sweetener), salt, and vanilla

Classic Ice Cream Recipe (Standard Diet):
• 2 cups whole milk
• 2 cups whipping cream
• 6 egg yolks
• 1 cup sugar
• 1 tsp salt
• 1 tsp vanilla extract
• Add your favourite flavourings afterward!
Clarifying the carnivore version
1 cup cream warm to incorporate the 6 yolks by tempering once mixture comes to a custard,
then cool by adding two more cups of cream don’t forget a teaspoon of salt
That’s it
then use an ice cream maker or freeze and stir every half hour for two hours
Because there is no sugar, it will harden more than regular ice cream so make sure to take it out of the freezer a few minutes before you want a snack
