1. Soak Rice:
Wash and soak rice for 4–5 hours (or overnight).
2. Grind:
Drain water and grind soaked rice with coconut (if using) and some water until smooth.
3. Prepare Batter:
Add more water to make the batter very thin (like buttermilk). Add salt.
4. Heat Pan:
Heat a non-stick or cast iron pan. Grease lightly with oil.
5. Pour Batter:
Pour a ladleful of batter and rotate the pan so it spreads thin (don’t spread like a regular dosa).
6. Cook:
Cover with a lid and cook for a minute. No need to flip.
Once done, fold into triangle or roll and serve.
