🍪 Buttery Shortbread Cookies (approx. 35–40 cookies)
Ingredients:
100 g butter, melted (≈ 7 tablespoons)
½ cup granulated sugar (≈ 90 g)
2 teaspoons vanilla sugar or 1 teaspoon vanilla extract
1 ¼ cups all-purpose flour (≈ 150 g)
½ teaspoon baking powder
(Optional: 2 tablespoons brown sugar or 1 teaspoon honey for extra caramel flavor)
Instructions:
1. Preheat oven:
Set oven to 350°F (175°C).
Line a baking sheet with parchment paper.
2. Mix butter and sugar:
Pour the melted butter into a bowl.
Add the granulated sugar.
Stir with a spoon until evenly combined (it won’t be fluffy since the butter is melted).
3. Mix dry ingredients:
In a separate bowl, combine:
Flour Baking powder Vanilla sugar or extract
4. Combine wet and dry ingredients:
Pour the dry mixture into the butter-sugar mixture.
Stir until it forms a soft dough.
If too sticky, add 1–2 tablespoons more flour.
5. Shape cookies:
Option 1: Roll into 2–3 logs and place on the baking sheet. Flatten slightly with your fingers or a fork.
Option 2: Form small balls with two spoons or your hands, place on baking sheet, and flatten slightly.
6. Bake:
Bake for 10–12 minutes, until edges are lightly golden.
7. Cool and cut:
If rolled into logs, slice into diagonal pieces immediately after removing from oven.
Let cookies cool on the sheet; they firm up as they cool.
