1 puff pastry sheet
2 red bell peppers
1 yellow bell pepper
1 red onion
3 tomatoes
1 garlic clove
300 g goat cheese log
Olive oil
Herbes de Provence
Salt and pepper
Instructions:
– Preheat the oven to 200°C (392°F).
– Slice the bell peppers, onion, garlic, and tomatoes.
– Cook the tomatoes, bell peppers, garlic, and onion in a sauté pan with olive oil. Let the juices from the vegetables evaporate. Season with salt, pepper, and herbs.
– While the vegetables are cooking, cut the goat cheese into small cubes. Grease the bottom and sides of the tart pan well. Spread the goat cheese evenly on the bottom of the pan.
– Add the vegetables on top and press down gently.
– Unroll the puff pastry over the vegetables, making sure it completely covers them.
– In a small bowl, mix an egg yolk with a little water and brush this mixture over the pastry.
– Bake until the pastry is golden and cooked through (about 15–20 minutes).
