Chocolate Peanut Butter Rice Cake Recipe
Looking for a quick, crunchy, and satisfying treat that combines chocolate, peanut butter, and a hint of salty goodness? These Chocolate Peanut Butter Rice Cakes are the perfect no-bake snack or dessert. With just a few simple ingredients, you can create a sweet and salty delight that’s ready in no time.
Ingredients
4–6 lightly salted rice cakes
½ cup salted peanuts (crushed or whole)
½ cup peanut butter (smooth or crunchy – your choice)
200 g milk chocolate
A pinch of sea salt
Method
Prepare the base
Take a rice cake and spread peanut butter evenly on both sides.
Add crunch
Dip the peanut butter–coated rice cake into crushed peanuts, pressing gently so they stick. Place onto a lined tray.
Chill
Put the tray in the fridge or freezer for 15–20 minutes until the rice cakes are firm.
Melt the chocolate
In the meantime, melt 200 g of milk chocolate until smooth and glossy.
Coat with chocolate
Once the rice cakes are set, dip each one into the melted chocolate, covering it completely. Place them back on the tray.
Final set
Return the tray to the fridge until the chocolate hardens.
Finishing touch
Sprinkle a little sea salt on top for that perfect sweet-and-salty flavor.
