Ingredients:
Melted ghee – 1 cup (225 ml)
Powdered sugar – ¾ cup (200 g)
Suji (semolina) – 2 tbsp
Gram flour (besan) – 2 tbsp
All-purpose flour (maida) – 445 g
Baking powder – 2 tsp
Baking soda – ½ tsp
Cardamom powder (elaichi) – 1 tsp
Roasted Almonds – chopped (as desired)
Milk – 1/4 cup or as needed (to adjust dough consistency)
For egg wash:
Egg – 1
Milk – 2 tbsp
Yellow food color – a pinch
🍪 Method:
1. Preheat the oven to 180°C (350°F).
2. In a large bowl, mix melted ghee and powdered sugar until smooth.
3. Add semolina, gram flour, all-purpose flour, baking powder, baking soda, and cardamom powder.
4. Add milk gradually to form a soft, smooth dough.
5. Mix in chopped roasted almonds.
6. Shape the dough into small balls and flatten slightly.
7. Arrange on a parchment-lined baking tray.
8. Prepare egg wash — beat egg with 2 tbsp milk and a pinch of yellow food color.
9. Brush each cookie with egg wash and place chopped almonds on top.
10. Bake for 30–45 minutes or until light golden and crisp.
11. Cool completely on a wire rack before serving — they’ll turn perfectly crunchy and aromatic!
