Ingredients:

– 1 cup coconut milk
– 1 tablespoon agar agar powder (vegetarian gelatin)
– 1 tablespoon sugar (or to taste)
– 1/4 teaspoon salt
– Flavorings (optional): vanilla extract, pandan extract, or fruit juice
Instructions:
1. Combine coconut water, coconut milk, agar agar powder, sugar, and salt in a saucepan.
2. Whisk until agar agar dissolves.
3. Bring mixture to a boil, then reduce heat and simmer for 5 minutes.
4. Remove from heat and add flavorings (if using).
5. Pour into individual molds or a large mold.
6. Refrigerate until set (about 3-4 hours).
7. Serve chilled, garnished with toasted coconut flakes or fruit.
Tips:
– Use full-fat coconut milk for creamier jelly.
– Adjust sugar to taste.
– Add food coloring for colorful jelly.
– Experiment with different flavorings.
Agar Agar Powder Substitute:
– Gelatin (1 tablespoon agar agar = 2 tablespoons gelatin)
– Carrageenan (1 tablespoon agar agar = 1.5 tablespoons carrageenan)
