These delicious pancakes you can enjoy without standing over the stove. They can be made with many different toppings and even perfect for breakfast on the go. We are using Bisquick pancake mix to make it that much easier but you can use homemade pancake mix too!
Ingredients
2 Cups of Pancake Mix
2 Vegan Eggs, we used 1/2 cup of just liquid egg
1 cup non dairy milk
2 tbsps vegetable oil
1/4-1/3 cup of sugar
Additions: we used blueberries, strawberries and maple syrup but you can use anything you’d like
Directions
Spray your 12 mini/medium muffin pan with cooking spray or wipe with oil
Preheat oven to 400
In a large bowl add the first 5 ingredients
Whisk well
Pour 1/4 cup into your muffin pan
Add your toppings
Bake in preheated oven for 15-18 minutes until toothpick comes out clean and golden
Remove and let cool 3-5 minutes
Remove, serve and enjoy
