Ingredients
3 cups plain flour
1 teaspoon baking soda
2 teaspoons ground ginger
1 teaspoon ground cinnamon

½ teaspoon salt
¾ cup unsalted butter (softened)
¾ cup brown sugar
1 large egg
½ cup molasses
1 teaspoon vanilla extract
Instructions
Prepare the Dough:
In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
In another bowl, beat butter and brown sugar until creamy. Add the egg, molasses, and vanilla extract. Mix well.
Gradually add the dry ingredients to the wet mixture and combine until a dough forms.
Chill the Dough:
Wrap the dough in cling film and refrigerate for at least 1 hour.
Roll and Cut:
Preheat the oven to 175°C (350°F).
Roll out the dough on a floured surface to about ¼-inch thickness. Use cookie cutters to shape the dough into gingerbread men or other festive shapes.
Bake:
Place the cookies on a baking tray lined with parchment paper. Bake for 8-10 minutes or until edges are slightly firm.
Decorate:
Once cooled, decorate with icing, sprinkles, or other toppings of your choice.
