4 ingredient vegan chocolate truffles that are great for your gut and blood sugar!
• 3-4 sweet potatoes or purple sweet potatoes
• 1.25-1.5 cup of melted unsweetened chocolate
• 2-3 tablespoons of cacao powder
• 1 tsp salt
I added maple syrup here for sweetness. I also added whey protein here.

Steam the sweet potatoes and blend with melted chocolate salt and cacao. Refrigerate for a minimum of two hours then scoop and roll into balls in cacao powder.
I freeze mine so I can enjoy them anytime.
This recipe is great as it is low in glycemic index, thus the release of sugar is much slower. And the resistance starch feeds good bacteria in the gut. If you are eating a protein and vegetable diet, this is a great dessert to satisfy your tooth.
