Sloe Berry Jelly
▶️ Ingredients
600g slow berries (frozen overnight)
200ml water
1 1/2 cup sugar (1.5 times of berry juice)
1/4 lemon, juice and skin (make sure the lemon is unwaxed and organic)
Wash, drain and freeze your sloe berries overnight. Once they are frozen, give them a good shake to break their skins. Put them a heavy bottom pot and add 1/3 of their weight in water. Cook on low and stirring often for 15-20 minutes. Strain through a metal sieve and put the sloe juice/pulp back into the pot with 1.5 the amount of sugar to the juice weight. Cook until the mixture temperature reaches 105 degrees Celcius. Pour into the jar and if there’s still some drying effect left, let the jelly mature for a few weeks.
