00:00 buckwheat crepes 2 ingredients – or use your favourite flour
00:21 Mix 1 cup flour and 2 cups sparkling water
01:02 Rest for 5-10 minutes
01:20 I use a 1/2 cup scoop to pour out the batter to make about 23 cm (9 inches crepe)
01:30 Check the thickness and add more sparkling water if needed
01:39 Cook on one side until golden underneath about 2-3 minutes and the edges start to curl from the sides of your pan
then flip and cook for 30 seconds to 1 minute
01:45 Repeat until all the batter is used and rest covered with a tea towel
01:57 Storage and serving ideas for the crepes – we had them dipped into homemade curries and they were delicious, no rice but the crepes like bread!!!
