Full Recipe – Pavlova Roll with Raspberry Filling & Pistachios
Meringue:
6 egg whites
250 gr granulated sugar
23 gr corn starch
A pinch of salt
1/2 tbsp lemon juice
A handful of pistachios (optional)
35 minutes at 150 C/ 300 F
Middle rack and don’t open the oven mid process
Frosting:
130 gr cream cheese
120 ml whipping cream
Vanilla
50 gr icing sugar
Raspberry filling:
150 gr frozen raspberries
60 gr sugar
Lemon zest of 1/2 lemon
7 gr corn starch
15 ml water
