🍪 For the Shell(s):
– 2 bags Myna Midnight Mini Cookies (crushed)
– 1/4 cup melted butter
🤍 For the Filling:
– 1 tbsp unflavored ground gelatin
– 3/4 cup cold water
– 3/4 cup organic coconut sugar
– 3 egg yolks
– 1/2 tbsp vanilla extract
– 2 cups heavy cream
✨ Instructions: ✨
1. **Shell/Bottom:** Crush two bags of Myna Midnight Mini Cookies, mix with melted butter, and press firmly onto tart molds/pans.
2. **Filling:**
– Dissolve gelatin in water for 10-15 mins. Set aside.
– Beat egg yolks and sugar until pale and creamy (about 5 mins).
– Pour egg mixture into gelatin and cook on low heat, stirring for 10 mins or until it boils.
– Add vanilla extract. Allow it to cool to room temperature.
– Whip heavy cream until soft peaks form. Mix gently with the gelatin mixture.
– Spread vanilla mixture over the tart shell/bottom.
– Refrigerate for at least 6 hours or overnight.
