Ingredients:
2 overripe bananas
2 large eggs
¾ cup rolled oats ( roughly blended )
2 tbsp melted unsalted butter
½ tsp salt
1 tsp baking powder
1 tbsp honey
1 tsp vanilla extract
Steps:
1. Peel and mash bananas using a fork.
2. Add eggs, butter, vanilla and honey. Stir until incorporated.
3. Add rolled oats, baking powder and salt. Mix until well combined but do not over mix.
4. Heat the pan over medium-high heat and add ¼ cup of the mixture.
5. Once you see more bubbles on top, probably around 2-3 minutes, flip it over and continue cooking around 3 minutes again.
6. Remove from the pan and put it on your serving dish.
7. Repeat the process until you’ve used all the mixture. You may find that you need to reduce the heat to medium low as you cook the next few batches. It really depends on how well your pan holds heat. Adjust the temperature as necessary.
8. Add some fresh fruits like berries and bananas and of course syrup if you like it. This is optional.
9. Serve and enjoy!
