Ingredients:
• 1 cup baked pumpkin purée (about 250 g)
• ¾ cup brown sugar (150 g)
• 1 large egg
• ¾ cup unsalted butter, melted (180 g)
• 3 ½ cups all-purpose flour (430 g)
• ½ tsp salt
• 1 tsp baking powder
• 1 tsp ground cinnamon
• ⅓ tsp ground nutmeg
• ½ cup chopped walnuts (50 g)
• ½ cup chopped almonds (50 g)
• ¾ cup dark chocolate, chopped (120 g)
Instructions:
1. In a large bowl, combine the baked pumpkin, brown sugar, egg, and melted butter. Blend with an immersion blender (or whisk well) until smooth.
2. Add the flour, salt, baking powder, cinnamon, and nutmeg. Mix until a soft dough forms.
3. Stir in the chopped walnuts, almonds, and dark chocolate.
4. Cover the dough with plastic wrap and refrigerate for about 1 to 1½ hours.
5. Preheat the oven to 350°F (180°C).
6. Divide the dough into 9 portions and place them on a parchment-lined baking sheet.
7. Bake for 20–25 minutes, or until golden and set.
8. Let cool slightly before serving.
